Chorizo Burgers with Cool Ranch Pepper Sauce

Ingredients:

1 lb ground beef (80/20)
1/2 lb pork chorizo, loose
1/2 cup buttermilk
1/2 cup mayonnaise
2 Tbl Buttermilk Ranch Seasoning
1 medium onion, chopped
1 whole roasted red pepper, seeds removed
1 Tbl butter
1 Tbl olive oil
1 tsp smoked paprika
1/2 tsp cayenne
1/2 tsp cumin
1 1/2 cups cojita cheese crumbles
1 avocado, pitted
1/2 tsp kosher salt
