Goat Cheese Spinach Pesto:
2 cups of spinach, packed
1 garlic clove, minced
¼ cup of pine nuts, toasted
½ cup of olive oil
salt & pepper
1 teaspoon of lemon zest
juice of half a lemon
1 teaspoon of honey
3 oz of goat cheese
1lb. of fettuccini pasta
1 lb. of large shrimp, deveined and shells off
olive oil
salt & pepper
