Single-Serve Peach Crumble

Ingredients
4 medium peaches
⅓ cup rolled oats
¼ cup whole wheat pastry flour (GF alternative: oat or coconut flour)
⅛ cup brown sugar, packed
1 tbsp (raw) pumpkin seeds (or sliced almonds)
½ tsp cinnamon + extra for dusting
Small pinch of sea salt
⅓ cup cold butter (I used Earth Balance vegan spread)
