Baked omelette with summer fruits / David Eyre’s pancake with summer fruits

Ingredients (1 serving) 
2 large eggs
0.5 cups of flour
0.5 cups of milk
pinch of freshly ground nutmeg
2 tablespoons butter
pinch of salt
approximately 100 g of cottage cheese or ricotta
about 5 tablespoons granulated sugar – part sweetening cheese, sprinkle some into an omelet
1 tablespoon vanilla extract
favorite summer fruits (apricots I’ve used two handfuls of cherries and a handful of red currants)
