½ cup butter, softened
½ cup unrefined coconut oil
1 cup light brown sugar, packed
¾ cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
½ cup white rice flour
⅓ cup teff flour
⅓ cup almond flour
⅓ cup potato starch
1 teaspoon xanthan gum
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon ground nutmeg
1 teaspoon cinnamon
3 cups gluten free rolled oats (old fashioned or quick, do not use instant)
1½ cups raisins
