Cappuccino Blondies with Cinnamon Sugar

INGREDIENTS
For the blondies:
1 stick unsalted butter, melted
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla
1 tablespoon instant espresso powder
Pinch salt
1 cup all purpose flour
½ cup white chocolate chips
For the cinnamon sugar topping:
2 tablespoons icing (confectioner’s) sugar
½ vanilla bean pod, split and seeds scraped out
¼ teaspoon cinnamon
1 tablespoon white (granulated) sugar
