Orzo and Roasted Shrimp

½ pound orzo
¼ cup lemon juice, freshly squeezed
3+1 tablespoons of olive oil, divided
1 + ½ teaspoon salt, divided
½ +1/4 teaspoon black pepper, divided
1 pound (21-25 count) shrimp, peeled and deveined
5 scallions, both green and white parts chopped
1 medium red onion, chopped
½ cup fresh dill, chopped
½ cup fresh parsley, chopped
1 cucumber, unpeeled, seeded and diced into small cubes
1 cup feta cheese, crumbled
