Lemon Rice Pilaf

Ingredients:
2 tbsp. olive oil
1 large Spanish onion, finely diced (roughly 1 cup)
1 1/2 cups long grain white rice*
3 cups chicken stock
zested rind of one large lemon (roughly 1 tbsp., compressed)
juice of one large lemon (roughly 1/4 cup)
1/2 tsp. ground black pepper
1/2 cup roughly chopped flat leaf parsley, loosely packed
3 tbsp. salted butter
