Blackened Barramundi with Spelt Flatbread

SPELT FLATBREAD
1 cup wholemeal spelt flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sour cream
1/4 teaspoon ground cumin
1 teaspoon ground coriander

BLACKENED BARRAMUNDI
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon garlic powder
1 tbsp smoked paprika
1/2 teaspoon chilli flakes
1/2 teaspoon sea salt flakes
pinch ground pepper
2 barramundi fillets (about 300g each)
Spray olive oil

TO SERVE
Corn Salsa
Lettuce
Coriander
