1 pound of spinach, washed and stems trimmed
1 shallot, finely minced
2 cloves garlic, pressed
3 TBS butter
1 teaspoon salt
½ teaspoon freshly ground pepper
1 TBS flour
¼ cup half and half
¾ cup heavy cream
Pinch of freshly grated nutmeg
¾ cup grated Gruyere cheese
