½ of a medium sized iceburg lettuce – thinly shredded (¼ of an inch)

1-2 lb of chicken breast and/or thigh – skin on and bone-in

3 whole green onions –thinly sliced

1 small bunch of cilantro – roughly chopped

½ cup of salted peanuts

¼ cup of sesame seeds – lightly toasted (optional)

2 cups of rice sticks/bean threads – fried | or | 5 wonton wrappers – fried (optional) *see note*


½ tsp dry yellow mustard

1tsp white sugar

2 tsp soy sauce

1 tsp pure sesame oil

1tsp lemon peel – grated

1 Tbs lemon juice

4-6 Tbs salad oil (canola, vegetable, sunflower etc…)

Optional additions: some grated ginger and minced garlic

Chicken Seasoning

¼ cup all purpose flour

1 Tbs cornmeal

½ tsp salt

½ tsp Chinese five spice powder *see note*

¼ tsp pepper
