Ingredients:

For the Croutons:

2 cups crusty bread, cubed (I usually use multigrain bread for croutons – more flavor!)

4 slices of bacon, diced

1 tablespoon butter

2 garlic cloves, finely minced or grated

1 teaspoon crushed red pepper flakes (or to taste – this amount makes the croutons fairly spicy!)

1 teaspoon garlic salt

Freshly cracked black pepper

For the Dressing:

1 shallot, finely minced

1 tablespoon Dijon mustard

2 teaspoons red wine/sherry vinegar

1-2 teaspoons honey (to taste)

¼ cup olive oil

Salt and pepper

For the Salad:

Cooked bacon (reserved from making the croutons)

1 cup cherry tomatoes, halved

1 cup sliced cucumber

6 cups baby spinach (or green of choice)

2 eggs

Butter, for frying eggs
