• 1 (13 oz) beef smoked sausage, sliced on the bias into medallions
• ½ onion, halved again and sliced

• 4 cloves garlic, pressed through garlic press
• 1 (28 oz) can organic diced tomatoes with juice
• Salt
• Black pepper
• ¼ cup pitted kalamata olives, halved or whole
• 2 tablespoons fresh dill, chopped
• 4 cups cooked orzo pasta, warm
• ¼ cup crumbled feta cheese
